Halo Halo There!


I've discovered that the joys of travel can be re-created within the confines of your home through poring over old photos and trying out exotic recipes. One of my most interesting travel food experiences was whilst we were in Manila. Ed and I walked into this little restaurant that was doing a buffet of local food. The place, though busy, did not have a single tourist in sight (other than ourselves) and I took that to be a good sign. We tucked into a variety of local delicacies including the most random dessert ever, Halo Halo. Halo Halo literally means 'mix mix'. Whilst the traditional Halo Halo recipes (including what we tasted in Manila) include beans, shaved ice, rice, coconut water jelly, jackfruit, yam and evaporated milk, you can be flexible with the ingredients. I've made two versions of the recipe so far and my favourite one is below.



And whilst I tuck into this little delightful dessert, I am reminiscing about an adventurous day off our cruise ship in Manila; exploring little alleyways, posing with lady boys, witnessing some incredible ice skating, taking in the city's culture and history and smiling at the best health & safety poster I'd seen in a long time.

Ingredients:
Sharon fruit, chopped
Kiwi, chopped
Nata De Coco ( can be bought from Asian stores)
Ice-cream (any flavour, I used vanilla)
Mixed nuts
Evaporated milk
Grenadine liqueur

Method:
Fill the glass/serving dish with 1 cm'ish layers of the various ingredients. Choose any structure you fancy. I started mine with a layer of nuts and followed on with grenadine, ice-cream, kiwi, coconut gel, ice-cream, sharon fruit, coconut water gel and some more ice-cream. Pour evaporated milk over this mixture and its good to serve. I'd love to know if you've made Halo Halo too and what your versions looked like. Ann x

The low-FODMAP diet

Many IBS sufferers and their practitioners swear by the elimination – under guidance – of certain carbs, known as FODMAPS (in the January issue of Healthy Food Guide, we’ve included some IBS-friendly recipes for you to try). FODMAPs are certain types of carbohydrates that are not absorbed in the small intestine and are instead passed into the colon. Although they are poorly absorbed by everyone, only some people get IBS symptoms when bloating, flatulence, abdominal pain and constipation occur as the natural bacteria in the colon digest the food.

These FODMAPs (Fermentable oligosaccharides, Disaccharides, Monosaccharides and polyols) tend to be found in processed foods, artificial sweeteners, wheat products, some vegetables, fruit and pulses and some dairy foods. For example, fructose (a monosaccharide) is the main type of sugar found in fruit juice, fruit and honey; lactose (a disaccharide) is the main type of sugar found in dairy products; and types of sugars called oligosaccharides are found in foods such as cereals, bread, pasta, biscuits and cakes.

How the low-FODMAP diet works 
With the help of a dietitian, over a period of eight weeks, FODMAPs are virtually eliminated. If your gut is going to respond to a low-FODMAP diet, this is the period during which IBS symptoms should lessen dramatically or disappear. You then reintroduce FODMAPs one by one – each over a period of three days. From this you can establish those that trigger IBS symptoms and those your body is able to tolerate. It may be that you can tolerate certain amounts of a certain FODMAP, which is useful to know if you’re going out for dinner, or to a friend’s house.

‘One of my clients, for example, now knows she can tolerate some gluten-containing foods occasionally without aggravating her IBS symptoms,’ says registered dietitian and IBS specialist Jennifer Low. ‘This has been useful as her husband’s family eat lots of pasta. But she also knows if she has a wheat-based cereal for breakfast, a sandwich at lunch and pasta for dinner she gets a very painful tummy.’

If you think a low-FODMAP diet may relieve your symptoms, look for a registered dietitian in your area (ask your GP to refer you or visit freelancedietitians.org), who will be able to guide you through the elimination and reintroduction process. It’s very important not to try it without guidance. ‘Many foods contain FODMAPs and you could seriously compromise your health if you try to eliminate these foods without the help of a health practitioner,’ says Jennifer.

Beans Thoran and Cabbage Thoran

Thoran is a relatively easy to make side-dish (typically dry) which is often served as part of Sadhya  (Onam meal). My personal favourites are Green Beans Thoran and Cabbage Thoran. It helps that my English hubby, who happens to be a fan of Indian food in general, loves them too. Here are the recipes:

Beans Thoran

Ingredients:
500g Beans
100g grated coconut (I often use Sainsbury's un-sweetened dessicated coconut)
1 Onion, finely chopped
3 tbsp tomato ketchup
1 sprig of fresh curry leaves ( dry leaves can also be used and if available at most supermarkets)
Mustard seeds
1 tsp chili powder ( add more if you like it spicier)
0.5 tsp turmeric powder
3 pods fresh garlic
2 tbsp ginger paste
1 tbsp oil ( use coconut or sunflower oil)

Method:
Splutter the mustard seeds. Add curry leaves and onion and fry till onions translucent. Add the spices and beans cook for another 5 mins. Add ginger, garlic and coconut. Cover and continue to cook until the beans are fully cooked. Halfway through add a bit of the tomato ketchup. It gives it that sweet/sour taste that perfectly complements the beans. Your thoran is now ready to serve.

Cabbage Thoran

Ingredients:
1 medium size cabbage
100g grated coconut (I often use Sainsbury's un-sweetened dessicated coconut)
1 Onion, finely chopped

1 sprig of fresh curry leaves ( dry leaves can also be used and if available at most supermarkets)
Mustard seeds
1 tsp chili powder ( add more if you like it spicier)

0.5 tsp turmeric powder
3 pods fresh garlic
2 tbsp ginger paste
1 tbsp oil ( use coconut or sunflower oil)

Method:
Splutter the mustard seeds. Add curry leaves and onion and fry till onions translucent. Add the spices and shredded cabbage cook for another 5 mins. Add ginger, garlic and coconut. Cover and continue to cook until the cabbage is cooked and looks translucent. Your cabbage thoran is now ready.
